tomato pie with thyme and lemon mustard

INGREDIENTS

For 1 pie :

  • 5 tomatoes
  • 1 shortcrust pastry
  • 2 tablespoons of olive oil
  • Salt and pepper
  • 100g of thyme and lemon mustard
  • A pinch of herbs of Provence

PREPARATION

  1. Preheat the oven to 180°C. Spread the shortcrust pastry in a dish and prick the bottom with a fork.
  2. Drizzle the pie crust with the thyme and lemon mustard.
  3. Cut the tomatoes into thin slices and arrange them in the bottom of the pie making several layers.
  4. Add a pinch of salt, pepper and herbs. Finish by pouring two tablespoons of olive oil.
  5. Bake the pie for about 25 minutes.

Enjoy hot or cold with a salad!
