- Preheat the oven to 180°C. Spread the shortcrust pastry in a dish and prick the bottom with a fork.
- Drizzle the pie crust with the thyme and lemon mustard.
- Cut the tomatoes into thin slices and arrange them in the bottom of the pie making several layers.
- Add a pinch of salt, pepper and herbs. Finish by pouring two tablespoons of olive oil.
- Bake the pie for about 25 minutes.
Enjoy hot or cold with a salad!
