CRISPY ZUCCHINI WITH ONION JAM

INGREDIENTS

RECIPE PREPARATION

1. Pour the flour into a container, add the egg yolk, salt, cold water

2. Whip quickly

3. Heat the oil in a frying pan (if like me you don't have a fryer)

4. Pass the zucchini rings in the tempura batter, and immerse them in the hot oil for 2 to 3 minutes, until they are lightly golden

5. Reserve on absorbent paper

It is the contrast of the very cold dough and the hot oil that allows a quick and perfect cooking.

Serve immediately with onion jam with honey.
